Job Description

Chef / 1st Cook

As Chef / 1st Cook you are the company's manager, reporting to your Head Office. You are responsible to be efficient, professional and represent Brookwood Camps & Catering.

  1. It is of the utmost importance that food must be attractively prepared and served.
  2. Ensure the client and their staff is treated with respect. Always strive for customer satisfaction.
  3. You are responsible for meal/menu planning and preparation, inventory, placing orders and proper care and storage of inventories and stock rotation.
  4. Ensure the camp inside and the surrounding area outside is kept neat and tidy, work is completed and correctly done.
  5. The 2nd Cook, General Help and the Camp Attendant report to you.
  6. Maintaining accurate reports such as man-day sheets, casual meal sheets, and time sheets as well as prompt submission of same. Ensure all paperwork is done properly and neatly and submitted on time.
  7. You are responsible for safety procedures and meetings in camp, ensuring staff adherence, and reporting incidents to your Head Office.
  8. All other related duties.

2nd Cook

As 2nd Cook, you are responsible for assisting the cook to ensure the kitchen performs to the highest standard possible. The 1st Cook has the final decision.

  1. Duties as assigned by Chef or 1st cook.
  2. Ensure kitchen & dining areas (chairs, tables, walls and ceilings) are cleaned on a regular basis.
  3. Prepare rig-box (hot meals going to personnel working on the rig). The rig-box meals should be identical to the meal served in camp.
  4. Make sure there is an ample supply of condiments on the service table at all times.
  5. Prepare and set-up full salad bar featuring a variety of salads (four to six).
  6. Assist in stock taking and any duties that the cook may deem necessary. Care and rotation of all fruits and vegetables in fridges and storeroom.
  7. Wash all dishes; pots and cutlery, ensuring all are sanitized.
  8. Assist in loading and unloading groceries, and putting away properly.
  9. Prepare sandwiches and present them in an orderly fashion.
  10. Fill and clean juice dispensers, coffee maker, water cooler etc. Keep service area clean.
  11. Assist the cook with preparation of meals, baking etc. If an emergency occurs you can take over the cook duties, for a short period of time if required.

Baker

As Baker, you are responsible for assisting the cook to ensure the kitchen performs to the highest standard possible. The 1st Cook has the final decision.

  1. Preparation and baking of all pies, squares, bread products and daily sweets as required.
  2. Proper cleaning and sanitization of any equipment utilized.
  3. Prepare, cook and serve night meals and breakfast meals when required.
  4. Assist with unloading, loading and stocking of groceries and supplies.
  5. Assist with inventory.
  6. Pre-breakfast preparation and breakfast short-order service.
  7. Sandwich preparation for the daytime lunch when required.
  8. Supervise all other Brookwood associates on night shift.
  9. If night rig boxes are required then that is the Baker's responsibility.

Kitchen / General Help

As General Help, you work under supervision of the Chef, or 1st Cook. You are responsible for assisting the cooks to ensure the kitchen performs to the highest standard possible. The 1st Cook has the final decision.

  1. Duties as assigned by Chef or 1st Cook
  2. Clean kitchen equipment, dining room, floors, walls etc.
  3. Move food and materials within kitchen including received shipments, items from storage to production.
  4. Cut and clean vegetables for cook. Sandwich preparation.
  5. Assist with food service staff.
  6. Wash all dishes; pots and cutlery, ensuring all are sanitized.
  7. Assist in camp start-ups, shut downs, and moves.
  8. Ensure care, rotation and restocking food product.
  9. Food handling and production methods to meet the 'Food Safe' and 'HACCP' quality control criteria demanded in camp food services.

Service/Maintenance

As a Service/Maintenance employee, you should have a basic knowledge of plumbing, electrical, heating, refrigeration, and carpentry.

  1. Be able to lift 50 lbs.
  2. Be able to clear clogged sewage pumps.
  3. Clear snow when needed.
  4. Maintain yard – ensure area is clean and free of debris.
  5. Report all consumable levels.
  6. Troubleshoot and maintain diesel generators.
  7. Conduct general maintenance and repair of modular units and equipment in a remote camp environment.
  8. Identify problems and communicate them to maintenance manager.
  9. Inspect camps on a daily basis to identify all issues.
  10. Be proactive in identifying small problems before they become major problems.
  11. Work safe and attend weekly safety meetings, report any hazards, incidents or injuries within 1 hour.

Camp Attendant

As Camp Attendant, you report directly to the Head Cook / Chef / Camp Manager. Your functions and position is very important, as you are the one whose work results are seen immediately. Therefore, it is important you know your job and attendant responsibilities and do them well.

Previous camp experience is preferred.

  1. Reporting all bunk checks of your assigned dorms.
  2. Cleaning of dorm rooms, bathrooms & shower.
  3. Laundry.
  4. Vacuuming, mopping floors.
  5. General outside yard cleanup when needed.
